I love marble cakes…. There is something about the pattern which takes my heart away… And hence when I saw this at nupur’s blog it was an instant love. and what is not there to love… there is a bake cheese cake, there is a brownie and they are marbled together… totak win situatio. So I had bookmarked this dish and waiting for something to happen so that I can bake it and than came Diwali when I decided to make the giveaway basket myself… It was one of the most treasured items of the basket for me… the texture brilliant and the brownie and the cheesecake perfectly complimenting each other. We loved this one and I am sure will make it again

What I used

For the cheesecake

  • 170gms cream cheese – I actually used hung curd, hang curd in a musling cloth or put it in a sieve overnight so that all the whey can go away. Remember to keep this whole thing in fridge else the curd will turn sour
  • 1 tbsp. unsalted butter, softened
  • 1 egg
  • 2 tbsp. sugar
  • 1 tbsp. all-purpose flour
  • 1 tsp. vanilla extract

For the brownie

  • 7 tbsp. melted butter
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

How I made it

  • In a bowl mix together all the cream cheese ingredients till blended
  • In a another bowl beat all the brownie ingredients well.
  • And now starts the layering… In a greased and dusted baking pan pour most of the brownie mixture, I poured about 2/3rds of the whole
  • Pour the cream cheese portion on top of it
  • Now pour some dollops of the brownie mixture on top of cream cheese and swril a knife or toothpick to get a nice pattern
  • Bake in a preheated oven at 175C for about 30 mins till done

Serve hot and wait for it to get over in a jiffy… its abs yummmm

Mandy I know this leave with depressed but darling much love passed your away, I hoping that this will motivate you to buy a oven and we can see Baking Buddies back in action

and this is off to a event hosted at Nupur’s blog… off to Blog Bites : The Holiday Buffet

Ojas is a very picky eater, very choosy about what he eats and even if he likes something he eats it very less… but one thing that works mostly with him is Pasta (a big kala tikka and touchwood here)

So I try and make pasta very often and also try and make it as healthy as possible… this one is one of my own creations that comes out very very yummy and is highly nutritious

Ingredients

For the sauce

Part 1 ingredients

  • 1/2 cup yellow moong dal
  • 10 ripe and red tomatoes
  • 1/2 capsicum chopped
  • 1 carrot chopped
  • 1 bunch spinach

Part 2 ingredients

  • 1 large onion chopped finely
  • 1/2 capsicum chopped finely
  • 1/4 cup peas
  • 1/4 corn
  • 1 carrot chopped
  • 1/2 – 1 cup grated cheese
  • 1 tbsp olive oil
  • 1 tsp pepper powder
  • 1 tsp oregano or any other dried spice
  • Salt to taste
  • 200 gm whole wheat boiled pasta (any shape but ojas loves fusilli or penne… I use Fab India pasta and its really fab)

Method

  • Wash and boil the moong dal in a cooker well. Mash it a bit
  • Blanch the tomatoes for 2-3 minutes in boiling water
  • Remove the skin and keep aside
  • Par-boil rest of the Part 1 vegetables and then grind all the part 1 ingredients to make a smooth paste
  • Heat the olive oil in a heavy bottom pan and then add onions to it
  • Fry for 4-5 minutes till they start changing color
  • Add the carrots, capsicum, peas and corn and stir fry for 5 minutes or so (U can also choose to parboil these veggies)
  • Add salt, pepper and oregano (U can also add some chilli flakes if u want it spicy)
  • Add the sauce prepared above and let it cook in medium flame for about 10 mins
  • Add the shredded cheese and boiled pasta to it…. Mix well and serve hot

I was going to do this recipe a little later but than lot of people have asked for it since I put the pic on FB… specially Deeps…So deeps this one is for u 🙂

Actually these are just cheese dinner rolls shaped as croissants but they taste pretty yumm and go very well with any continental kind side dish for dinner, with eggs for breakfast and even with tea if u make their mini versions

Ingredients

  • Maida 250gms
  • Salt 4gms (1 little less than 1 tsp however u can go upto 1 tsp)
  • Sugar 10gms
  • Yeast 12gm
  • Water 150ml
  • Fat 14gm (we can use butter/margarine or oil)
  • Milk 10ml
  • Pepper Powder 1 tsp
  • Cheese 75gm
  • Mustard Powder ¼ tsp

Method

  • Mix yeast, water and sugar together and let it activate for about 5 mins.
  • Sieve flour and make a well in the center. Add the yeast solution, milk and make soft and smooth dough by kneading. We have to knead it really well atleast for 25 mins or so till it passes the gluten membrane test. Basically when u take a piece in your hand and stretch it should not break
  • Mix the fat now and smoothen it.
  • Add the grated cheese, pepper powder, mustard powder and knead again for like 4-5 mins. (U can also add any herbs at this point, I think I added oregano to mine)
  • Rest the dough covered for about 20-40 mins (depends on the weather hot weather it will work sooner) till it becomes double
  • Knockback the dough and rest again for 5 mins
  • Roll the dough in a smooth circle. Cut into 8 triangle pieces using pizza cutter.
  • Take one part, make the slit at the bottom of about ½ – 1 inch and roll upwards to give it a Croissant like shape till u reach the tip. Put a drop of water to seal.
  • Place in the greased baking tray
  • Leave it for proofing for about 10-15 mins till it doubles in size and when u touch it kind of bounces back. At this stage u can also brush them with a little mixture of egg and for the shine and color
  • Bake at about 200C for 10-15 mins
  • The above recipe will yield 8 of them.

cheese, curd, Friday Feast, green chutney, peas, recipe, sandwich, veggies, whole wheat bread

I love sandwiches, the very fact that you can make a sandwich as healthy or as sinful as you want :D.. Also you can eat them at any time of the time.. breakfast, snacks, dinner… Isn’t that versatile.

I am eating a lot of sandwiches for breakfast these days however I find very less recipes that can suit my requirements these days viz no cheese, no butter, no potatoes but still tasty 🙂 A lot surfing, a little bit from this recipe, a lit bit from that and I have discovered my own set of such healthy and low cal sandwich recipes. Here are the two which are my favourite.

Avanti hopefully you can use them for your snacks too and Sols hope peanut likes them too.. Let me try and do some recipes that I make for Ojas next week :D, only point is that I will have to click pics

Green Peas and Roasted Tomato Sandwich

Ingredients

  • 4 slices of whole wheat/multigrain bread
  • 1 cup shelled and boiled peas
  • 1/2 onion chopped
  • 1 tomato
  • Green Chutney/ cheese spread
  • Grated cheese (optional)
  • Salt to taste
  • 1/2 tsp red chilli flakes
  • 1 tsp dried oregano
  • 2 flakes of garlic

Method

  • Mash the green peas coarsely by either a masher or in the mixer
  • Cut the onions and mix the masalas, green peas and onions together
  • Cut the tomatoes in round, place them on a microwave friendly plate and microwave on HIGH for abour 4 mins
  • Sprinkle the oregano and garlic flakes on top of the tomatoes
  • Put the microwave on convection/grill and roast for about 5 mins
  • Spread green chutney on one side of two slices, for kids or for those who like and can afford cheese use cheese spread 🙂
  • Put a layer of green peas stuffing on the bread and put 2-3 roasted tomatoes on the top, u can also top it with grated cheese if u want
  • Grill it or roast it on the tava
  • Repeat with the other two slices

PS: pls excuse the qaulity of the above pics… taken from N’s lousy cell camera 🙂

Its an absolutely yummilicious sandwich and very healthy because of the nutrients used.

Dahi Walla Sandwich

Ingredients

  • 4 whole wheat/multigrain bread slices
  • 1 cup curd
  • 1 onion chopped
  • 1 carrot grated
  • 1/2 cup grated cabbage
  • 1/2 tsp red chilli flakes
  • 1/2 tsp black pepper
  • pinch of nutmeg/cinnamon powder

Method

  • Hang the curd in a muslin cloth for about half an hour so that the whey drains out

DSC06047

  • Mix all the ingredients along with the curd drained of whey
  • Put some mixture into the slices and grill or roast on tava

I really love this sandwich, I used to love mayo based sandwich but since I cant have it now I found this closer and healthier option. Personally I think that curd is the best way to have milk based products. Extremely healthy, maximum amount of calcium and great bacteria for the stomach..

baking, cheese, egg, omelette, recipe, vegetables

So the verdict is out, The results I got by the poll were almost equal and left me even more confused. And man which one of you voted for the last option, sigh because someone did 🙂

I really like Sol’s idea though and I am going to start a Friday Feast series here and see how it goes. So every Friday I will take you down the culinary road and try to make you drool and motivated enough to go to the kitchen 🙂

And today I present to you the Baked Omelette.

Some days back I was chatting with Goofy and she told she is heading to the kitchen to make baked omelette, a recipe that she had seen on a show, I liked the idea a lot and while I was on a diet kept looking for an opportunity when I could make it and then came my birthday and I made it for breakfast, everyone in the house really loved it and for a change even Ojas gobbled it down

Ingredients

  • 4 egss
  • 1 chopped onion
  • 1 chopped tomato
  • 1 finely chopped capsicum
  • 1 cup grated cabbage
  • 1 cup grated cheese
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 3-4 jalapeno peppers
  • 1 tsp milk
  • salt, chilli flakes, pepper and Tabasco to taste

Method

  • Beat the eggs well along with the milk, adding milk to the eggs makes them more fluffy and the dish comes out softer
  • Add all the other ingredients apart from cheese and Tabasco mix well
  • Pour in a baking dish
  • Bake in a preheated at 200 degrees for about 4 mins till the eggs are about half done
  • Spread the cheese and sprinkle Tabasco on top now and put it back in the oven for about  5 more mins or till the eggs are done and the cheese nicely melted
